Who would have thought it was this easy? First, let’s add a bit of vinegar, sunflower oil, salt, sugar, and pepper. In my opinion, a little onion would also be a great addition.

Let’s take about 15 cucumbers and slice them very thinly. We won’t bore you with peeling the cucumbers, but it is often suggested to cut them from the sides and avoid the bottom end, which can have a bitter taste. However, we will test this method to see if there’s any truth to it - sometimes, these tips can be misleading - and determine if the peel has any bitterness. It may be that cucumbers were more bitter in the past than they are today, but it’s hard to say. Either way, let’s slice them thinly and evenly - about one millimeter thick.

Next, we will add salt to extract the cucumber’s liquid. We prefer to add sugar along with the salt, as it helps remove more water from the cucumber. Mix it all up with the cucumbers and let the salad sit in the fridge for about thirty minutes to an hour until the water is extracted. Once the time is up, remove the water and add some finely chopped red onions. Here is a little trick: pour boiling water over the onions before you add them to the salad; this removes the harsh taste of raw onions.

Finally, we’ll dress the salad with some sunflower oil and mix it all well. Don’t forget the importance of seasoning and tasting the salad to adjust the flavors as you go. You could also add some sour cream to the salad to make it creamier, but personally, I prefer it as is. It’s a wonderful side dish that pairs well with fish or even schnitzel.
