Hey everyone, this is Julia from EDEKA Genussmomenten and today we’re making my favorite childhood recipe - steamed dumplings with Heidelberg sauce and vanilla sauce. In my childhood, we called them yeast dumplings or Hefeklöße in German. So, let’s start with making the dough.

We need half a cube of yeast and 35 milliliters of lukewarm water. Mix them together with half a teaspoon of sugar so that the yeast can activate. Take 375 grams of Type 405 flour and gradually add the yeast mixture to it. Also, add 200 milliliters of warm milk and a pinch of salt. Knead everything nicely for about ten minutes until the dough is smooth and not sticky anymore. Add 20 grams of butter to the dough and knead it once again.

Let the dough rise for an hour to get the aroma and texture right. Once it has risen, set aside around 6 dumplings from the dough mix. Roll them in your hands, making sure that there are no creases and the dumplings are round. Let them rest for another 20 minutes until they rise further.

In a pot, take some water and let it boil. Add a little oil to prevent the dumplings from sticking to each other. Now, add some of the Heidelberg sauce that we have already prepared. You can get the sauce by extracting the juice from fresh blueberries and mixing it with some cornflour. Allow the dumplings to simmer in the pot with the sauce for about 20 minutes.

Meanwhile, let’s prepare the vanilla sauce. Take 300 milliliters of milk and add a tablespoon of cornflour. Slowly, add this mix into the pot that’s already containing three egg yolks, one vanilla pod, and a tablespoon of sugar. Cook everything over low heat while stirring continuously until the sauce thickens.

Finally, serve the steamed dumplings with the Heidelberg sauce and vanilla sauce on top of them. You can relish the flavors of creamy and fruity sauces along with the light, fluffy dumplings.
