First, you will need ten small rolls, ideally from the day before. However, you can also collect them throughout the week and use dried rolls instead. Cut the rolls into small pieces and set them aside.

Next, you will need some eggs, salt, pepper, and fresh parsley. Heat up some milk and dissolve the parsley in it. I like to use red onions because they add a nice color to the Semmelknödel and give them a delicious roasted flavor.

After roasting the onions, pour them over the bread pieces, and let them soak in the milk mixture for about 20 minutes. Once the bread has soaked up all the milk, add the eggs, salt, and pepper, and mix everything together. You can now form the mixture into small balls, and you are almost done.
