Hey guys, it’s great to have you back for another episode. I’m feeling really good today because we’re going to be making tacos. I’m super excited and hope that the tacos will bring a bit of Mexican flair into the kitchen and a little bit of sunshine because there’s a crazy storm raging outside, destroying Berlin’s autumn with non-stop rain.

I want to forget about that for a minute and make some delicious Mexican tacos. Let’s get started with the ingredients. I have 300g of high-quality beef mince, preferably fresh from a butcher and organic. I also have some taco shells that I didn’t make myself, but that’s ok. They’re difficult to make, so it’s easier to buy them.

I also have some fresh tomatoes, a garlic clove, onion, lettuce, cheddar cheese, fresh coriander and a lime. Of course, we need lots of spices to season the meat. You may be familiar with the pre-made spice mixtures you can find in supermarkets, but they usually contain a lot of unhealthy additives.

Today, I’ll show you how to make a simple spice mixture yourself, and I promise you’ll be surprised by how delicious the meat tastes when it’s seasoned with it. And we’re going to start making the tacos right away.

First, I’ll heat up a pan on medium heat and add some sunflower oil. You could also use a neutral-tasting oil like rapeseed oil. It’s important to use an oil with little flavour so it doesn’t overwhelm the other ingredients. Once the oil is hot, I’ll add the beef mince to the pan and cook it for about 7-10 minutes until it’s browned.

While the meat cooks, I’ll prepare the spice mixture. I’ll take about 2 teaspoons of chilli powder, 1 teaspoon of paprika powder, 2 teaspoons of cumin, a pinch of oregano, a pinch of garlic powder, a few chilli flakes, and salt and pepper to taste. I’ll mix all of this together and crush it slightly because there may be some larger pieces of spices.

I’ll also quickly chop the garlic and onion, which I’ll add to the beef mince. This will cook for about a minute with the meat. Instead of fresh garlic and onion, you can use powdered onion and garlic in the spice mixture, but fresh is always better in my opinion.

Next, I’ll add 1 teaspoon of cornstarch to the spice mixture, which will help to thicken the sauce and make it adhere to the meat. I’ll add some water to this mixture to help distribute the spices and bind with the starch. This will create a thick sauce, which is perfect for beef tacos.

I’ll let this cook for another 3-4 minutes to allow the spices to infuse with the beef. Meanwhile, I’ll heat up the taco shells in the oven for 2-3 minutes. Once they’re ready, I’ll add about 3 tablespoons of the beef mince to each taco shell, along with some grated cheddar cheese, chopped lettuce and coriander.

To make it even more delicious, I’ll also add some homemade salsa, which is super easy to make. I’ll blend some tomatoes, lime juice, garlic, chilli, and salt and pepper in a mixer until smooth. If you want it chunkier, then blend it less.

And there you have it, a delicious beef taco with all the right flavours and textures. You could also add other ingredients like avocado or jalapenos, but I’m keeping it simple today.
