In my last video, I made the delicious and healthy cauliflower thalers, paired with lamb’s lettuce and a potato dressing. Many of you have requested the recipe for the potato dressing, and today I am happy to share it with you.
To start off, I have already washed the lamb’s lettuce and set it aside. Next, I have boiled some jacket potatoes, preferably floury ones as they work best for this dressing. However, boiled potatoes can also work, depending on what you have on hand. I recommend using warm potatoes as they absorb the dressing and spices better. This makes the dressing creamier and more flavourful.
Once the potatoes are cooked, I peel them and press them through my potato press. Then, I season them with some mustard, vinegar, salt, and pepper. Adding some stock from pickles enhances the flavour of the dressing, and I also add some vegetable broth and herbs to it. I prefer fresh herbs such as chives, parsley, or lovage, but frozen herbs can work as well. After stirring everything together, I find that the dressing is a little thick, so I add some vegetable stock and oil to the mixture. I then try the dressing to see if the flavours are balanced, adding more seasonings if necessary.
The dressing should have a strong taste that compliments the lamb’s lettuce. If it’s too mild, it won’t carry enough flavour, so it’s best to make it strong. I pour the dressing over the lamb’s lettuce, making sure it adheres to the salad and doesn’t run down. For garnish, I add some croutons and fried bacon strips.
The lamb’s lettuce with the potato dressing is now ready to be served. This is a simple yet healthy dish that is easy to make, with the only time-consuming part being the potato boiling process. However, the warm and creamy dressing is worth the effort.
