In der heutigen Folge 458 von “Ahmet Kocht” dreht sich alles um das beliebte türkische Fladenbrot, das Kleine Pide. Pide ist ein wichtiger Bestandteil der türkischen Küche und wird besonders während des Ramadan gerne gegessen. Ahmet zeigt uns, wie man das kleine Gebäck ganz einfach zuhause backen kann.

Today, in church we are all saying “Welcome!” as we make little flatbreads for Ramadan. We’ll start with 400g of flour, sieving it well, and adding white sesame and black sesame on top later. For the dough, add in 200ml of warm water, 30g of fresh yeast, a tablespoon of sugar, seven pinches of salt, a tablespoon of margarine, and a tablespoon of olive oil. One person can use a mixer, or you can knead it by hand. You can also add a spoonful of yogurt but, if you don’t have any, it’s not essential. We’ll begin soon, and it should only take 12 minutes to finish.
Don’t worry about the time, I can work quickly. If you use a machine, don’t let it go too long, or it’ll become too tough. Watch for those tricks, turning it the right way and making it go faster. Be careful, though - this is not a pizza dough, so the flatbread should be light and fluffy. Once it is done, it should look like the ones from the Schwerte Plaggenborg area.
Now, we need to let the dough rest for 30 minutes. During this time, we can prepare the work surface and the tools. Pastor Willi knows this well - we need 700g of dough total, which means four pieces of 175-190g each. Try to make them look similar so that they cook evenly. Once you’ve done this, let them rest for another 15 minutes.
Next, we need to brush their tops with yogurt, using a generous amount but not too much. Then, we’ll press our fingers into the dough to make little dents. We will do this all over each piece, then add more sesame seeds on top. Finally, bake them on the middle shelf of the oven for 15-17 minutes at 220 degrees Celsius.
Be careful, as they will get done quickly. Once they’re finished, enjoy your little flatbreads, but don’t forget to be mindful of your faith, and remember what Ramadan means to us.
