The first thing I do is add some sesame seeds in a hot pan, and I’ll use them as a topping at the end. Toasted sesame seeds taste much better than untoasted, and they add a nice crunch to the dish. You can use peanuts or any other toppings you like; it’s a matter of personal preference.

Next, I prepare the Asian trio of ginger, garlic, and chili. I use dried chili, which is very spicy; I once did a heat test with Samuel on the channel if you haven’t seen it yet. If you use fresh chili, it’s best to remove the seeds to avoid making it too spicy. I peel the ginger using a teaspoon, and then chop it into small pieces along with the garlic and chili. Together, they add a lot of flavor and spice to the dish.

I also boil some water to cook the noodles. I use udon noodles, which are available in Asian markets and cook quickly. While waiting for the water to boil, I add the sesame oil and Asian trio to a pan at medium heat, so they release their aroma.

As the ingredients cook, I cut the spring onions and Korean garlic finely. I add them to the pan to sauté a bit. When the noodles are done, I drain them and add them to the pan, stir-frying them with the rest of the ingredients, before adding the peanut butter and soy sauce.
