First, we need to remove the leaves from the cabbage. This can be challenging, so my little tip is to cut off the core and use a meat fork to help you detach the leaves. Then, we put the whole cabbage head in salted water and let it boil until the leaves start to loosen. As soon as the leaves come off, we take them out and put them in cold water so that their color remains vibrant.
Next, we prepare the filling by mixing the minced meat with the soaked bread roll, onions, salt, pepper, cumin, mustard, and parsley. We knead the mixture until it becomes compact and then taste it to make sure it’s seasoned well.
For the sauce, we cut the onions and bacon into small pieces and fry them in butter. Then, we add tomato paste, water, and a little bit of flour to thicken the sauce.
Now comes the fun part - assembling the collage. We take one cabbage leaf and put a generous amount of filling on it. Then, we roll it up, tucking in the sides as we go. We tie the roll with kitchen thread to secure it and repeat the process with the remaining leaves and filling.
We put the rolls in a pot with some chopped onions, bacon, and potatoes, and pour the sauce over them. We let everything simmer for about 45 minutes until the cabbage is tender and the flavors have blended together.
Finally, we remove the kitchen thread and arrange the cabbage rolls on a platter. We serve them with the potatoes and some more sauce on top.
