Welcome to another episode of Thomas Brauchst’s cooking channel where we’ll be making a delicious and simple potato broccoli casserole. But before we begin, don’t forget to subscribe and hit the bell icon to get notified whenever we upload new videos.

For our casserole sauce, we’ll be making a classic Bechamel or white sauce. Here, I have 70 grams of butter, 70 grams of wheat flour, a small onion, a garlic clove, 2 bay leaves, a pinch of grated nutmeg, 1 liter of milk, salt, and pepper. For the topping, we’ll use cheese. You can use any cheese you like, but here I have Gouda and Edam. For extra flavor, you can add Parmesan or any other hard cheese that melts easily.

First, we’ll prepare our ingredients. We need 1.5 kilos of unpeeled potatoes, make sure to use firm potatoes, and 2 large broccoli heads. We’ll start by chopping the onion and garlic into small pieces. It’s important to get comfortable with using the knife for cooking, and you should always use a claw grip when cutting to avoid injuring your fingertips.

We’ll then sauté the onion and garlic until they are translucent. For the sauce, we’ll melt the butter and whisk in the flour, stirring constantly to avoid lumps. Once the flour and butter are combined, we’ll slowly add the milk, stirring continuously. We’ll then add the bay leaves, nutmeg, salt, and pepper, and let the sauce simmer for ten minutes.

While our sauce is cooking, we’ll peel and slice the potatoes into equal-sized, two-millimeter-thick pieces. We’ll then blanch them in boiling water for a few minutes until they’re just tender. We’ll set the potatoes aside and cut the broccoli into florets.

We’ll then mix the potatoes with a third of the sauce and some of the cheese. We’ll transfer this mixture into a buttered casserole dish and arrange the broccoli florets on top. We’ll pour the remaining sauce over the broccoli and sprinkle the rest of the cheese on top.

Our casserole is ready to go into the oven, which we’ve preheated to 180 degrees Celsius. We’ll bake it for around 30 minutes until the cheese is golden and bubbly. We’ve served it hot with some fresh parsley as a garnish.
