With New Year’s Eve coming up, I thought it would be a great idea to share this recipe for a Metaxa Gyros soup. It’s easy to make and full of flavor, so you and your guests can celebrate in style.

But before we start cooking, I just wanted to say thank you to all of you out there who have been supporting this channel. First, we’ll need some Gyros meat. I’ve marinated some pork neck in Gyros seasoning and used my own Gyros spice blend, but you can use any seasoned Gyros meat. We’ll also need some vegetables: corn, tomatoes, peppers, mushrooms, and onions. For the liquid components, we’ll use cream, vegetable broth, Metaxa (a Greek brandy), tomato puree, and Mascarpone cheese. Finally, we’ll need some oil for frying and some Gyros seasoning for extra flavor.

Once we’ve chopped and prepped all of our ingredients, we’ll start by frying the meat in a bit of oil until it’s nicely browned. We’ll then remove it from the pan and set it aside. In the same pan, we’ll fry the onions, peppers, and mushrooms until they’re softened. Then, we’ll add the tomato puree and fry it for a bit too. After that, we’ll pour in the Metaxa and flambe it (be careful!) until the alcohol has burned off. We’ll then add the vegetables and broth, bring the mixture to a simmer, and let it cook for 45 minutes.

Once the soup has cooked for 45 minutes, we’ll add some Gyros seasoning, cream, and Mascarpone cheese. After stirring it all together and letting it cook for a few more minutes, our soup will be ready to serve! It’s hearty, flavorful, and perfect for feeding a big crowd.
