In the latest video of Helau und Zurück, the focus was on one of my favorite topics - food! Specifically, pasta. I absolutely love pasta and could eat it every day. I know I’m not alone in my love for this dish, which is why I decided to create a video with five different pasta variations for all of us pasta lovers out there.
I wanted to make sure that the recipes I included were not your standard pasta dishes. I included some variations that might be new to you, but I hope they will inspire you to try something different. To begin, I shared my idea of lemon quark pasta. This variation is fresh and light, thanks to the quark and lemon. The combination of flavors might be a little strange at first, but trust me, it works! I started by cooking the pasta and then sautéed some onions and garlic in oil. Next, I added some diced tomatoes, dried tomatoes, and tomato paste to a bowl of quark, along with some parmesan cheese, salt, chili, and garlic powder. I mixed everything until it was a cohesive mixture, and then added it to the pan with the onions and garlic. Once everything was cooked through, I combined the mixture with the pasta and voila - a delicious lemon quark pasta!
The second pasta variation I shared was Indian-style pasta. This dish has an Indian twist that is sure to tantalize your taste buds. The focus is on the spices, particularly curry, which pairs well with the cauliflower. I started by sautéing some onion, garlic, and cauliflower in a pan, and then added some canned tomatoes, salt, pepper, cumin, cardamom, turmeric, and coriander. After adding some coconut milk, frozen peas, and cashews, I let everything simmer for a few minutes until the flavors melded together. Then, I added the cooked pasta and mixed everything together for a perfect Indian-style pasta dish.
The next pasta variation was a one-pot wonder, perfect for those who are short on time or don’t want to clean too many dishes. I sautéed the onion and garlic before adding some passata, hummus, soy sauce, and vegetable broth. I seasoned the sauce with a mixture of spices, including paprika, chili flakes, salt, and pepper. Then, I added the diced bell pepper and zucchini to the sauce and cooked the pasta in the same pot. This dish is flavorful, hearty, and filling, making it perfect for a quick dinner!

I added some halved cherry tomatoes and diced mozzarella to the pasta and then baked everything in the oven until the cheese was melted and bubbly. This baked pesto pasta is a great way to shake up your traditional pasta dishes.
