The best thing about cooking your own fried rice is that you can determine the ingredients yourself. You can put in the things you like and leave out the ones you don’t, or you can do it just like me and see what’s left in the fridge and use those leftovers for fried rice. It’s a really good way to use up any leftover veggies or meat you have in the fridge.
Today, I’m using spring onions, red onion, two garlic cloves, carrots, a mushroom, and a handful of frozen peas. Of course, you’ll also need rice. It’s best to use pre-cooked rice, preferably from the day before. I’m using jasmine rice today because I think it’s the best type of rice for this dish. It’s very important to rinse the rice before cooking it to get rid of the excess starch. This ensures that the rice doesn’t clump together in the fried rice.
To make the fried rice, start by cutting the onion, garlic, and carrot into small cubes. Heat up some sesame oil in a wok and add the vegetables to the pan. While the vegetables are cooking, cut the mushrooms and spring onions into small pieces. Add the mushroom to the pan and continue to stir fry for another minute. Now it’s time to add the rice to the pan. It’s important to use cold rice so that it doesn’t get too mushy. If you’re using freshly cooked rice, make sure to let it cool down completely before adding it to the wok. Once you’ve added the rice, distribute it evenly in the pan and continue to stir fry for a minute.
