Welcome back to my YouTube channel! Today, we will be cooking a recipe from my latest cookbook “Vegane Ernährung für Einsteiger” that I co-authored with Nico Rittenauer. It is a fantastic book, in my opinion, containing a lot of theory like all our joint books, but also a significant part devoted to practical recipes. Today, I will show you how to make the super cheese diaz, which I have named myself.
This recipe is an offspring of an online trend that was popular roughly six months to a year ago. I found it a smart way to cook tofu and created my version. I have warmed up the pan, which should be hot enough to cook our smoked tofu. I also added diced onions and homemade kimchi, the one I fermented by myself (and whose recipe you can also find on my YouTube channel).
Kimchi is a fermented Korean dish usually made with napa cabbage, radishes, carrots, onion, chili paste, and other spices. I cut the kimchi into small pieces, but you can also use sauerkraut instead. Once the onions are toasted, I seasoned them with a bit of salt and pepper. While cooking the tofu mixture, I also prepared some avocado cream, with parsley and a pinch of salt and pepper.
Next, I assembled the ingredients, including pflücksalat (lettuce), tomato slices, and vegan cheese from “Simplicio.” I took a tortilla wrap and cut it in half, no matter what size it is. Then, I filled each half with kimchi-tofu mixture, lettuce, vegan cheese, tomato slices, and avocado cream. I folded each piece over until I had a triangle and repeated with the second tortilla. I placed the folded tortillas into the hot pan and cooked it until the tortillas became crispy.
The cheese diaz is one of the recipes that I included in the “Snacks für Zwischendurch” (Snacks for In-between) chapter in the cookbook. These recipes are easy to make, satisfying, and suitable for a quick lunch or snack. Additionally, my co-author and I included some recommendations for finished products in the book, such as vegan meat alternatives, sausages, and cheese, that can be handy, especially for those starting with a vegan diet.
