Today, we have a one kilogram piece of game meat that we prepared yesterday by rubbing it with salt, pepper, a little vinegar and some rosemary and thyme.

One of the most important aspects of marinading is investing the time required. We recommend at least 12 hours of marinading so that the flavor is optimally infused into the meat. Next, heat up some rapeseed oil and fry the meat, after removing it from the marinade, until golden brown. Then, let it simmer in the marinade for the next 48 hours.

While the meat is marinading, we prepare the sauce. We use vegetables such as celery root, onion and garlic, and add a bit of sugar to caramelize them. Once the vegetables are slightly caramelized, we add some beef stock and let it simmer for about 23 minutes. Afterwards, we mix it with a hand blender until it is smooth, adding a dash of red wine and bitter chocolate to give it more flavor.

Once the meat has been marinated for 48 hours, we rub it with salt and pepper again and roast it in the oven at 130-140 degrees Celsius for about two and a half hours. The cooking time can vary depending on the age of the meat, which is why we recommend checking the meat’s temperature with a meat fork to make sure that it is done thoroughly.
