After poking it on both sides a few times, we can put it in a baking dish or directly on a baking sheet. When shopping for sweet potatoes, make sure they have an even shape so that they cook equally on both sides.

Next, we add a generous amount of olive oil and salt to the sweet potato, making sure to cover the entire potato. The skin can be eaten once it’s baked, and it tastes amazing with the olive oil. We put it in the oven at 200 degrees Celsius for about 40 minutes. While the sweet potatoes are baking, we can prepare the other ingredients.

First, we rinse off the daikon, and let it cook in boiling water for 12-15 minutes with some salt. Then we prepare the texmex toppings, starting with the red onion, garlic, and cilantro. We sauté the onion and garlic in olive oil on medium heat, then add beans, corn, and chopped bell pepper. We can add more or less of any of these ingredients to our liking.
