Hello and welcome to SugarPrincess! Today, I am excited to share with you my traditional recipe for cinnamon stars. These are not just any ordinary cinnamon stars, they are super juicy, aromatic, and have been perfected over the last 20 years. I am thrilled to share the best version of this recipe with you today.

Now, let’s get started with the recipe. The first step is to roast the hazelnuts and almonds in a pan without any fat until they are fragrant. You can use either almonds or hazelnuts or a combination of both. Once they are roasted, let them cool down and grind them to your desired consistency.

Next, add the dry ingredients such as powdered sugar, cinnamon, a pinch of salt, and cloves. I prefer to use a mini measuring spoon for the cloves to add just the right amount. Mix all the dry ingredients together well.

Add the liquid ingredients such as one egg white, a tablespoon of amaretto or any other liquid of your choice, and a little bit of orange paste. Mix everything together until everything is nicely combined, and a dough is formed.

Knead the dough until it becomes a crumbly mass. If the dough is too sticky, add a little bit of almond or hazelnut, and if it is too firm, add more liquid.

Flatten the dough into a rectangle and roll it out to about a centimeter thick. Cut out the cinnamon stars using a cookie cutter and lay them on a silicone mat. You can opt to refrigerate the dough before cutting it out if it is too sticky.

For the icing, beat an egg white with a bit of salt until stiff peaks form. Gradually add icing sugar while beating the mixture. Do not overbeat the icing.

Finally, apply the icing to the cinnamon stars and let them dry.
