Hello and welcome to Sugarprincess! Today, I will share with you our classic coconut macaroons recipe, which is super juicy on the inside and crispy on the outside - just the way they should be. These macaroons are a must-have on our cookie plate every year, as my husband is a huge fan of coconut macaroons and would never celebrate Christmas without them.

To make these macaroons, you will need four egg whites that you have to whip with a pinch of salt until the mixture has leveled. Add fine sugar and vanilla sugar gradually while whipping until the mixture shines and shows falling tips, which should take around five to ten minutes with a hand mixer. Then, add the quark, four drops of bitter almond aroma, and half a teaspoon of orange paste (optional) and mix everything thoroughly.

Next, add the ground coconut flakes to the mixture and stir them in at the lowest level. You can use a piping bag with a large star nozzle to pipe the macaroons on a baking tray or use two teaspoons to scoop the mixture and place it on the tray. The piping technique is recommended to ensure that the macaroons have a crispy shell. Make sure to pipe them evenly and aim for about three centimeters in diameter.

Preheat your oven to 175 degrees Celsius circulating air (or 200 degrees Celsius top/bottom heat) and bake the macaroons for ten to twelve minutes. Remember not to over bake them to prevent them from burning and to keep them juicy on the inside.

Once baked, let the macaroons rest on the baking tray for 10-15 minutes before moving them to a cooling rack to cool completely. You can dip them in chocolate or sprinkle them with chocolate, or just enjoy them as they are.
