Today we are working with celery, the perfect summer vegetable. Growing celery can be a bit challenging, at least that was the case for me. The first few times I tried to grow it, I wasn’t very successful. The soil where I live is a bit heavy, and celery needs a lighter, sandier soil. But once it takes root, celery is a joy to grow and use in so many ways.
Celery is one of my favorite vegetables, mainly because of its versatility. I love eating it raw, especially the tender green heart of the celery stalks. But when it comes to gardening, celery is also a great plant to have in your garden because it grows bushy and takes up a lot of space. You can harvest only a few stalks at a time, without damaging the entire plant.
For this recipe, you will need a whole celery root (minus the green leafy part), which you should cut in long strips, after removing the strings. You can use a peeler or a knife to do this. Cutting the celery in long strips is important because it tends to be a bit tough and woody when it’s large. Then you will mix the celery with some cherry tomatoes, garlic, vegetable bouillon, lemon juice, white wine, and a little bit of balsamic vinegar, salt, and olive oil. Put everything in the oven, and let it roast until the celery is tender and slightly caramelized.
For the topping, you can make a simple salsa with diced apples, soaked walnuts, chili, and lime juice. Mix everything together and let it sit for a few minutes to allow the flavors to meld. Then sprinkle a generous amount of celery leaves on top, along with some herbed cream cheese (or any other type of fresh cheese you like). Don’t skimp on the cheese or the herbs, as they add a lot of flavor and complexity to the dish.
Serve the roasted celery warm or at room temperature, with the salsa and cream cheese on top.
