Greetings, my dear friends, welcome back to Druck. Today I have something simple and quick to make for you - potato rösti. For this, we need potatoes, pepper, salt, nutmeg, and clarified butter. Today, I will show you my variation of making it, which may not be in line with what the Swiss say. They may even say that it’s not rösti. By the way, they don’t say “leeres” like we do, but that’s beside the point. Traditionally, rösti is made from boiled potatoes. However, we can make it from raw potatoes with a little bit of prior preparation, and I will show you how.

First, I have soaked the potatoes in water for a bit, and now I am using a coarse grater to grate them. Be careful not to hurt your fingers, and discard the last small piece even though it’s wasteful. Add a bit of salt and mix the grated potatoes. You will see water coming out of the potatoes, which we need to remove. Take a handful of the mixture and press it firmly to take out as much water as possible. Add some fresh pepper and nutmeg to the mixture.

Next, we need clarified butter, which is basically the butter without milk solids. You can buy it from the supermarket or make it at home by boiling butter and skimming off the milk solids. We need to heat the clarified butter in a pan and add the potato mixture to it. Flatten it as much as possible and let it cook slowly on low heat. You want the edges to turn golden brown, which will take about 8-10 minutes. Then, carefully flip the rösti using a spatula or an upside-down plate. Cook the other side for another 8-9 minutes until it’s golden brown.

Finally, take it out of the pan and cut it into triangles, depending on how many servings you need. It should be crispy, delicious, and ready to be served as a side dish to züricher geschnetzeltes or any other main course you like. You can even add grated zucchini to make it a vegetarian dish.
