Hello my dear, today I have a super delicious breakfast recipe for you. As you may know, I have been eating low carb lately and eggs have played a very important role. Today we are making Italian frittatas with feta cheese, mint, and a few other ingredients. Frittatas are a popular breakfast dish in almost all countries and I introduced a Spanish version in a previous video. Today, we will be using peas, zucchini, and a few other ingredients to make a delicious breakfast dish.
Frittatas can be made in different sizes, but I have chosen four eggs as that is the amount I need in the mornings to keep me satisfied. To start, I chop a onion and cook it in a pan with some olive oil. Meanwhile, I prepare a chili pepper by removing the core to make it less spicy. I also chop half of a zucchini into small cubes.
Once the onions have browned, I add the zucchini, chili pepper, and some frozen peas to the pan. While these vegetables cook, I beat four eggs in a bowl and add a pinch of salt. Once the vegetables are cooked, I pour the egg mixture into the pan and let it cook for about 4-5 minutes.
Before adding the toppings, I check the frittata and once it is cooked and slightly browned on the edges, I sprinkle crumbled feta cheese over the top. I also add some fresh mint leaves, which pair well with the peas and feta cheese. The dish is now ready to be served.
