Shakshuka

Shakshuka is a popular North African and Middle Eastern breakfast dish that has gained a lot of popularity in recent years. It is basically a mix of eggs, tomatoes, peppers and spices, all cooked together in a skillet to create a flavourful and filling meal.

To make the perfect Shakshuka, we will need some specific ingredients. Our host, Frank Stocker, is particularly passionate about the dish and has brought together all the necessary ingredients. Jochen, a fellow cook, has also joined him in this endeavour.

Firstly, we will need a can of Chipotle in Adobo. This sauce can be made at home or purchased ready-made. There is a recipe in Harald Zwart’s Schaf Schmecker cookbook, which Jochen used to make this dish. We will also need salt, pepper, coriander, cumin, and vegetable onions.

Other essential ingredients include shredded mozzarella, Italian Chili Peppers, cherry tomatoes, garlic, and some organic eggs. We will also require some olive oil for frying.

We begin by chopping two garlic cloves into small pieces and dicing a vegetable onion into small cubes. Our Italian chili peppers will also need to be sliced into fine strips. These are then sautéed in a heated pan with a generous splash of olive oil. We let them simmer for a while until they are tender and the aroma fills the kitchen.

Next, we add the cherry tomatoes into the pan and let them simmer until they break down and dissolve. We combine the Italian chili peppers, garlic and mozzarella in a mortar and pestle and grind them into a paste.

We will also need to add tomato paste and a mix of salt, cumin and pepper to the pan. This mixture is stirred and allowed to simmer for about ten minutes so that the flavours can blend together.

We then use a spoon to create small pockets in the tomato mixture, where we can crack in the organic eggs. The eggs are allowed to simmer and cook gently in the tomato sauce, while the mozzarella melts all around them, creating a beautiful and deliciously creamy texture.

Finally, we sprinkle some freshly chopped coriander over the dish and serve it up with freshly baked bread or toast. Shakshuka is a perfect dish for any time of the day, but it’s especially good for brunch or breakfast.

In conclusion, Shakshuka is a delicious and satisfying one-pan dish that is easy to make and packed with flavour. With the right ingredients and a little know-how, you can make a perfect Shakshuka dish for breakfast, brunch, or even as a light dinner. So why not give it a try and surprise your taste buds with this exotic taste of the Middle East?
