Hello and welcome! Today, we will be making a super quick, simple, and delicious bikini chicken schnitzel. The recipe requires only a few ingredients and it is really easy to make. I guarantee you that it tastes amazing. So, let’s get started.
Firstly, I would like to thank the company ‘Leistung’ for providing us with the cushion for this video. For our chicken schnitzel, we will need a chicken breast. I always recommend buying good quality, organic meat. It may cost more, but we do not need to consume too much meat. We also need some salt, pepper, lemon juice and zest, one onion, and 1-2 garlic cloves. Then, we have 250 milliliters of cream, a few brown mushrooms, frozen peas, parsley, and for the side, we have jasmine rice.
We will start with what takes the longest to cook, which is usually the side dish. So, we will start with washing the rice. I recommend using one small cup of jasmine rice per person. Wash the rice thoroughly with cold water until the water becomes cloudy. This is the starch and we need to get rid of it, as it will make the rice sticky. Wash the rice twice and drain the water using a sieve. Add one and a half times water to the rice. For example, if you use three cups of rice, add four and a half cups of water. Add some salt, about half a teaspoon, and cook the rice. Once it boils, cover it and reduce the heat to the lowest. Let it cook until all the water is absorbed. We can use a rice cooker too. Now, let’s move on to the chicken. Cut the chicken breast into thin strips, not too thin, as it will cook too fast. If you are smart, cut the vegetables first, then the chicken to prevent contamination. Cut the onion into small pieces and chop the garlic. Wash the mushrooms and slice them. Heat some oil in a pan and add the chicken. Let it cook and turn it over when it changes color. Then, add the onions and garlic and let them cook until they become translucent. Add the mushrooms and some more oil, if needed. Add salt and pepper to taste, and a dash of lemon juice and balsamic vinegar. The vinegar will give a nice color to the sauce. Let this cook for a few minutes until it thickens. Now, add the frozen peas and cook for a minute more. Finally, add the cream and let it cook for a minute or two. Add parsley and turn off the stove.
Serve your chicken schnitzel with jasmine rice and steamed vegetables. You can use any type of grain or even potatoes. It is a lovely dish, and you can enjoy it as much as you like.
