Hello dear ones, welcome to Manne Rezepte. Today, I want to introduce you to a Turkish pastry that not only looks amazing but also tastes super delicious. When I say “super” twice, it’s because this recipe is just that good! I have to say, this particular pastry turned out super soft and tasty, and you have to try it to experience it yourself. I actually invented this recipe myself, and instead of providing a list of specific ingredients, I challenge you to poke around in your kitchen and see what you have in your fridge. For example, if you don’t have yogurt, opt for quark instead. If you don’t have kvaca, no worries, use what you have. This time around, I was pleasantly surprised with the result, and immediately jotted down the recipe for you, as well as recorded a video tutorial with my friend. She baked them for her daughter’s wedding, and they were a hit among their guests. Even a week later, the pastries were still fresh, and they also freeze very well.

For this recipe, you will need 100 ml of lukewarm water, 100 ml of lukewarm milk, 100 ml of oil, 200 grams of quark or yogurt, a tablespoon of salt, three tablespoons of sugar, two packets of fresh yeast, a packet of baking powder, and 100 ml of whipped cream. I always go by feeling and intuition, so I will let you know exactly how much of each I used later. First, mix all the liquid ingredients together, add the oil and a bit of flour, and then add the salt. I used 700 grams of flour, but you can reduce the amount if needed. Let the dough sit for about half an hour to rise. Then, form little balls and roll them out into ovals (about the size of a small bagel). Cut small slits at the bottom, starting from the center, and place the filling in the center (I used cheese and olives). Fold it over and brush with egg yolk or sprinkle sesame seeds on top. Bake them in a preheated oven at 160 degrees Celsius for 20-25 minutes. It’s important not to bake them at higher temperatures or for longer than 25 minutes.
