Today, everything revolves around vegan recipes, and before I start the video, can you guys tell me in the comments who among you is participating in Veganuary this year? As every year, January is all about vegan nutrition, and many people start to think about this topic, maybe even take a vegan month. I have been following a plant-based diet since 2008, around 98-99%, so today, I’m going to share my ten favorite recipes with you.
Although I have uploaded a lot of cooking content on my channel in the past years, I am still getting questions like, “How did you do that?” or “What’s your favorite recipe?” That’s why I decided to share my favorites in a video, and some of them you might not have seen on my channel yet. I hope you are all hungry, or maybe not so much, but watch the video as usual, and I wish you all a lot of fun.
The first recipe is an avocado pesto that I uploaded to my channel about five years ago. It’s a simple recipe that you can eat with pasta, for example. If necessary, you can add some Parmesan cheese, but it also tastes good without. Add some olive oil, salt, and pepper, and sometimes I add some nuts like cashews or pine nuts.
Another pesto that I like to make is a carrot green pesto, and you need almost nothing else except the greens from the carrots, olive oil, garlic, and pine nuts. Put everything in the blender and add salt and pepper. It tastes different from basil pesto - a bit more robust and slightly spicier.
Let’s stick with pasta - this video is probably pasta-heavy, but let’s be honest, it’s just a great dish, and you can vary the side dishes as you like. In asparagus season, one of my favorite recipes is spinach and green asparagus pasta with pine nuts. Just cut the asparagus, fry it in the pan, add some pine nuts, and voila! You can also add some pesto, such as basil pesto, on top.
A recipe that I have discovered on Instagram and that has remained in my favorite repertoire is a mushroom pasta with a peanut sauce. For this recipe, you need shiitake mushrooms, which are very meaty and can give your dish a fish or seafood taste. Marinate them in soy sauce, lime juice, and some seaweed. Later, fry them in a pan and cook the pasta. The sauce is made of peanut butter, tahini, soy sauce, garlic, and some sweetener.
