I’ll be sharing my secret recipe for the perfect cookie dough, which is soft and chewy at the same time. So, let’s get baking!
To begin with, we need room temperature butter and brown sugar. We mix the two together for about two minutes on medium speed, adding in some vanilla extract. Next, we add in the eggs, making sure they are also at room temperature. Depending on their size, we may add two medium-sized eggs or one large egg and a bit of milk. It’s not necessary, but replacing one teaspoon of baking powder with half a teaspoon of cream of tartar can help prevent the sugar from crystallizing and adds some extra fluffiness to the cookies.
Now it’s time for the flour and baking powder. The dough may look dry at first, but it should become sticky and gooey after a few seconds of mixing. For my first variation, I add marzipan chunks, hazelnut brittle, and chocolate chips to the dough. I shape them with an ice cream scoop, leaving some space between them on the baking sheet. For the second variation, I mix in some salted caramel pieces and coarse salt flakes. Lastly, I make macadamia nut and double chocolate cookies, combining chopped macadamia nuts with both dark and milk chocolate chips.
Now it’s time to bake them! You can choose to bake them one at a time on a preheated oven at 180°C (350°F) or all at once on a slightly cooler 160°C (320°F) oven with circular air flow. Either way, they should be ready in about 9 to 12 minutes, with slightly browned edges and a soft center.
