Musik - Hello and welcome to Galileo! Today, we have the much-maligned celery. Who among you dares to try it? I have to be honest and say that I was quite skeptical about whether I should even make this recipe, because I don’t really like celery, at least not in its raw form. However, I received a cookbook from a colleague on Instagram and found a supported recipe with a note that said “Celery love”. That made me so curious that I thought I’d give it a try. These are the ingredients we need for the recipe. I didn’t have everything on hand, so I changed it slightly, but it’s pretty close. My celery sticks were almost empty, but I have already ordered a new batch. I always order the “bykow” because it is just much cheaper. For the decoration, I simply cut the leaves on top a little smaller and put them aside.

Then the celery must simply be cut into large pieces that fit in a casserole dish. In my case, I used a pan because I can put my pan in the oven. Then I cut the red onions into small cubes, which were actually supposed to be shallots, but I didn’t have any. I put some olive oil in the pan, three tablespoons as suggested, but I used a little less. Then I sautéed the onions a little and then they were supposed to be caramelized with sweetness. Since the balsamic vinegar I have is very sweet, I only used that, adding about 50 milliliters. I let the onions simmer in that.

Then I added 300 milliliters of vegetable broth and the celery sticks were simply placed side by side. It really is a super easy and quick recipe. Then the cashews are sprinkled on top and then the capers. That’s supposed to be three tablespoons, but I didn’t use that much. I put the rest in the fridge. Then it was salted and peppered and that’s it. Meanwhile, I preheated the oven to 180°C. You can see here that I have a pot from Hoffnung, where you can simply remove the handle and put the whole thing in the oven. It was in there for about 25 minutes, still slightly firm. You can leave it in a little longer if you like.

I have to say, I was really pleasantly surprised. It tasted so good, which I never expected because the combination didn’t sound super delicious to me. But if you’re brave enough, please try it out! It’s not only super healthy, but it tastes really good, even if you don’t like celery in its raw form. I simply served it with a piece of baguette, and it’s a super healthy and quick lunch.
