Hello and welcome to Sugarprincess! Today, we are going to make a super delicious Toffifee cake. This cake combines my favorite dark sponge cake with a delightful filling of nut ganache, cream, and a chocolate-nutty decoration made of Toffifee – it’s simply heavenly!

I am not alone in my love for Toffifee, my husband Wolfgang and my children also adore this irresistible treat. In fact, we often indulge in a pack of Toffifee while watching TV in the evening. You can only imagine what happens to the pack by the end of the night! Therefore, I thought of making a cake that would satisfy our Toffifee cravings any time of the day.

We will start by preparing the filling for the cake. First, we need to put the chopped dark nut chocolate in a bowl and pour hot cream over it. We will let it stand for five minutes before stirring it into a ganache. This hazelnut ganache will be the perfect filling for our cake.

The dark sponge cake should be pre-baked a day before we use it. Once it’s ready, we will place it on a cake turntable, put a cake cardboard on it, and add a cake ring around it. We then drizzle the sponge cake with caramel sauce, which we can either buy or make ourselves.

Next, we spread the ganache over the caramel-soaked base, making sure to spread the nuts evenly so that everyone gets plenty. We drizzle caramel sauce over it and add another layer of sponge cake, followed by a drizzle of caramel sauce.

It’s time to whip the cream until stiff, adding sugar and cream stiffener as desired. We spread a thick layer of cream over the sponge cake, and drizzle caramel sauce over it.

The final layer of sponge cake comes next, and we press it down carefully to avoid any air bubbles. We then cover the cake with ganache and let it cool in the refrigerator for at least four hours or, even better, overnight.

Finally, we will place the cake on a cake stand and decorate it with whipped cream, Toffifee, and a drizzle of caramel sauce. It’s a work of art and it tastes even better than it looks!
