Hello and welcome to Sally’s world! Today, we will be making a French dish and it always reminds me of the movie ‘Ratatouille’, which I’m sure you’re all familiar with, thanks to its incredible talent. I think I’ve seen it a thousand times, and I really want to watch it again with my friend Samira. Anyways, the dish we will be making is a vegetable dish that is first fried and then stewed in the oven. It comes from the south of France, near Nizwa, but it is also prepared in the south of Germany, in Waghäusel.

To make ratatouille, we will need three onions, six to eight garlic cloves, 500 grams of tomatoes, zucchinis, a red and a yellow pepper, and an eggplant. We will also use 100 milliliters of olive oil, a tablespoon each of oregano, rosemary, and thyme, half a teaspoon of chili, a teaspoon of salt, a pinch of sugar, and some pepper.

First, we will wash and chop the onions into roughly 5mm wide strips. We will then slice the garlic cloves and sauté them in olive oil until they are translucent. While the onions are cooking, we will cut the eggplant into large chunks and salt them to remove the bitter taste. We will also chop up the zucchinis and peppers into similar sized pieces. We will then add each vegetable to the pan, separately, and fry until they are lightly browned.

Next, we remove the vegetables from the pan and layer them in a casserole dish. We season each layer with salt, pepper, and the herbs. Once all the vegetables are in the dish, we add the tomatoes on top and season them as well. We then cover the dish with a lid and bake in the oven at 180°C for about 45 minutes.

After it’s done, we can serve the ratatouille with some baguette, mashed potatoes, rice, or as a side dish to a steak. It is a great substitute for meat and is vegan. We can also prepare it in advance and reheat it later.
