Once the fish is clean, it is important to remove the dorsal fin and pelvic fin, which contain spines that can be harmful if ingested. Use scissors to cut these fins off, and dip your fingers in salt to prevent the fins from slipping.
The next step is to scale the sea bream. The best way to do this is to use the back of a knife to scrape off the scales under running water, from the caudal fin to the head on both sides.
