Today we will be working with a mega cool vegetable, and that is topinambur. It is one of my favorite vegetables because of its flexibility, but in my cooking classes, I’ve noticed that many people haven’t yet had enough experience working with it.

It is perfect for the winter season, and that’s why in February we will be using topinambur. From a seasonal calendar perspective, it fits perfectly as it works wonderfully from November to March. It also keeps well in the fridge, making it an easy addition to your daily meals.

Today, we will be making two recipes to give you some inspiration on what you can make with this type of vegetable. The first recipe involves the use of an oven. The preparation may seem like a lot of work, especially since the topinambur is small, but it is worth the effort. If you buy organic topinambur, you can even use the skin if it isn’t too lumpy.

For the oven-baked topinambur, we will add some Mediterranean flavors to it. It is simple, with just a few ingredients. We will use a bowl of olive oil with rosemary or thyme, some vegetable broth, freshly ground black pepper, a bit of light or dark soy sauce, and capers to add flavor.
