But we’re going to leave it in because that’s what makes it half the dish. You probably only know cutting it out from salad, but Martin Schneider says to leave it in. We’re going to braise it instead, which is wonderful and can be used for various dishes.

Now, let’s add some butter to the pan, but different people handle the term “a little bit” differently. That was only a third of what Martin’s grandmother, Nettelbeck, used to give a family of nine people for a week. But at least it was good, which is what Olympia, my mother-in-law, always talked about. Then, there was the real butter and coffee, which had to be brought to Loki Schmidt, but thankfully, the honey we have is good.

Now, we’re going to put in these little friends, which we have to handle carefully not to let them fall apart. We’re going to braise them in a mixture of butter and honey. It’s a bit calorie-conscious, but it’s sweeter, so we’re going to add some chili to balance it out.

I’m not quite done yet. I’m going to flip them over, and they should look brown and a bit crispy. We’ve been simmering them in orange juice and honey for about forty-five minutes. They’re almost done, and now we can add some rum – 3.92 cl. Ooops, I got it wrong earlier when I mentioned the car. We don’t need a car for this; we just need fire. But don’t worry; it’s safe. I just need to pour the rum over the dish, and it’s done.

It’s soft and less bitter now, thanks to the honey. We can serve it with couscous, and it’ll be perfect with duck. Or we could have used fennel instead of chicory.
