Hello my dear, welcome back to Welt Kopf. Today we’re doing something Christmassy and festive, and that is how to make your own red cabbage or Rotkohl. For this, we need shepherd port wine, red wine, Saft von Samico, cranberries, agave syrup or sugar, salt, natural blue gold or red cabbage, bay leaves, cloves, allspice, juniper berries, cinnamon stick, and a bit of cardamom. First, we prepare the spices. You can, of course, just add them to the cabbage, but I am putting them in a tea bag. I am pressing on the juniper berries, allspice, and cloves a bit to get them to release some of their oils before adding them to the bag. Then we add the bay leaves, cinnamon stick, and cardamom.

Next, we add all the spices in the tea bag to the cabbage. You could also use a spice ball or cheesecloth to contain the spices if you don’t have a tea bag. I am using blue gold cabbage today, but you can also use red cabbage. I recommend cutting it into quarters, but if you have a large cabbage, cut it in half before quartering it. Make sure to cut off the outer leaves and discard them. Keeping the core intact, slice the quarters into thin strips, about a millimeter thick. It’s important to keep the core so the cabbage stays together when cooking. Discard the tough stem ends as they don’t taste good.

Now it’s time to marinate the cabbage. In a large pot, mix together the red wine, port wine, Saft von Samico, cranberries, agave syrup or sugar, salt, and a bit of orange juice and vinegar. Then add the cabbage to the pot and knead the mixture together with your hands. This is important to do so the spices can penetrate the cabbage. You’ll notice that there’s fat in the cabbage. If you’re making this with duck or goose, you can use some of the fat from the bird to add to the mix or add a bit of butter if you don’t have any.

Once everything is mixed together, bring the pot to a boil and then reduce the heat to a simmer. Cover the pot and let the cabbage cook for about an hour or until tender. Check on it every now and then and give it a stir. Once done, remove the tea bag or spices and transfer the cabbage to a serving dish. Enjoy with your favorite Christmas dish!
