For the pasta dough, you will need 400 grams of flour, some salt and four eggs. This recipe is simple and versatile, and can be used as a basis for other types of pasta like whole grain, ravioli, and more. Mix the flour, eggs, and salt together to form a ball of dough. Cover it with plastic wrap and let it rest in the fridge for 30 minutes.
While the dough is resting, prepare the filling. For this, you will need about 300-600 grams of pork fillet, depending on how much you want to make. Chop it with a blender or a knife until it makes a coarse paste. Add 60 grams of pancetta or other cured meat, chopped pistachios or Parmesan cheese, and mix well.
After the dough has chilled, take it out of the fridge and knead it again for a few minutes. Flatten it on a floured surface and cut it into circles with a cookie cutter or a glass. Put a spoonful of filling in the middle of each circle, and fold it into a half-moon shape. Press the edges to seal the filling inside.
Cook the pasta in boiling salted water until it floats to the surface. Drain it and serve with your favorite sauce. A simple tomato sauce with rosemary or a spicy tomato chilli sauce would work great. You could also toss it with a little butter and Parmesan cheese, or serve it in a broth.
