Today, I have a very quick recipe for all my friends. Just chop everything into small pieces and put it in the oven. Serve it with herb quark and you have a delicious meal ready in no time. Now, let’s get to the recipe.

First, we’ll start with the carrots. Cut them into thin slices, about a centimeter thick. Then wash the zucchini and cut them into slightly thicker slices. Cut the peppers into large pieces, removing the inside. The tomatoes should also be sliced into large pieces, about 2-3 cm wide.

Next, chop the garlic cloves into large pieces. Yesterday, at the festival, I saw some pigeons, and I really wanted to have them. But the woman spraying the birds told me they were just pigeons, not peace doves. I still think they were doves. Let’s move on.

Preheat the oven, then add half a teaspoon of oregano, thyme, and rosemary if you like it. For me, a half a teaspoon is enough. Now, don’t forget the potatoes! Cut them into quarters so they cook faster in the oven. You’ll need 2.5 kg of potatoes for this recipe.

Salt everything generously, and add 4 tablespoons of olive oil. Mix it all together well and then place it in the oven. Your veggies will be ready in no time.

While they’re cooking, let’s make the herb quark. I’m using a mix of sour cream and quark, but you can use just one if you prefer. Add some cream, salt, pepper, two chopped garlic cloves, and the herbs of your choice. I like chives and parsley, but dill also works well. Mix it all together and taste for seasoning. If necessary, add more salt.

After 50 minutes, your veggies should be ready. Check the potatoes with a fork to make sure they’re cooked through.
