“Hello and welcome to a new video from me. Today, friends, I have something really special prepared for you. We’re making the legendary vegetable curry with rice and turkey. But of course, you can simply leave out the butter to make it vegetarian, or even vegan if you leave out the honey. Even without meat, the dish still tastes amazing, which is why we can’t get enough of it every few days. It’s easy to make and extremely healthy, with complex carbohydrates from the rice, numerous vitamins and minerals from the vegetables and healthy plant-based fats, as well as protein from the peanuts and, of course, additional protein from the turkey.

Now, let’s get started! But first, let me tell you that if you don’t have all the ingredients at home, it’s absolutely no problem. You can easily substitute jasmine rice with another type of rice, and you don’t need to use all the specified vegetables, either. You can also vary the spices to suit your taste. So, no excuses - let’s get started!

We’ll begin by boiling about 150 grams of jasmine rice in water, before straining it and then boiling it again in two cups of hot water (about 300 milliliters). Then, let it simmer at low heat for about 30 minutes without the lid. While the rice is cooking, we’ll cut the vegetables - starting with the zucchini, which we’ll cut into thin slices. Next, we’ll chop up the red bell pepper and mushroom, and slice a few spring onions.

For the sauce, we’ll use some green curry paste and vegetable broth powder, and add some chili and cumin powder. We’ll mix everything together and set it aside. Once the rice is cooked, we’ll put some olive oil in a pan and fry the turkey until it turns brown. After that, we’ll add the vegetables and fry everything together for about 3 minutes before pouring in the sauce. We’ll let it simmer for another 10 minutes, stirring occasionally, before seasoning with salt, pepper, and lemon to taste.

Finally, we’ll serve the dish by placing the rice on a deep plate and pouring the curry and vegetables on top. Sprinkle some green onions and peanuts on top, and we’re done. It looks delicious, and it tastes even better! Even if it looks difficult to make, don’t worry. With a little practice, you’ll be able to prepare this amazing meal in no time.
