Hello my dears, welcome back to Ballet Head. Today’s video is a short basic one on how to make herb butter. For this, we need pepper, organic lemon, room temperature butter, parsley, lemon thyme, rosemary, basil, sage, a garlic clove, and a bit of salt. Of course, you don’t need to use all the herbs I have here. I have a quite abundant herb garden on my balcony, which is why I’m using a bit more. You can adjust the amount to your taste and what you have at home.
First, cut the garlic clove in half and remove the sprout in the middle, so it won’t taste too strong. You only need a quarter to half a clove if you want a mild garlic butter.
Next, pluck the herbs off the stems. You can leave the thin stems on the herbs, but remove the thicker ones, like in the case of sage.
Mix the herbs together and chop them up finely. You can use a knife or a food processor, but I prefer using a knife as it produces better results. Chop them into very small pieces so that your butter won’t have any big chunks.
Now, add the chopped herbs, salt, and pepper to the room temperature butter. Grate a bit of the organic lemon peel into the mixture and stir everything together with a fork. If you want garlic butter, mix in the chopped garlic at this stage.
You can use the butter straight away or store it for later. To store it, you can either put it in a container or shape it into a log. To shape it, place the butter on a sheet of cling film and form it into a log by rolling it up, keeping the sides tightly closed. You can also use a piping bag or a mold if you prefer.
If you want to make herb crust, mix in some breadcrumbs and an egg yolk. Spread the mixture on a piece of meat and bake it in the oven. It will be crispy and flavor-packed.
Homemade herb butter is far superior to store-bought ones. The freshness of the herbs and the zesty flavor of the lemon peel make a big difference. You can also freeze the butter for later use. Enjoy the delicious taste and the aroma of the fresh herbs. It’s a simple yet wonderful way to enhance your cooking.
