Hello dear people, today we are making a really great schnitzel parade. If you wanted to see it, then stick around. For this week’s recipe, we will be making two beautiful and large courgettes, which we will first cut the tops off, then slice them into flat pieces. We will also trim off the bottom roots of the courgettes, as an example.

For the coating, we will need three bowls, one filled with flour, one with eggs and one with breadcrumbs. I prefer to use the whole egg for this recipe, but you can use egg whites if you prefer. Before we start dipping the courgette slices in the flour, egg, and breadcrumbs mixtures, we must season them with salt and pepper. We will also add 20 grams of pecorino or parmesan to the breadcrumbs mixture, to give the schnitzel extra flavor. Once coated, we will fry the courgette slices until they are golden brown.

When frying the schnitzel, it is important to drain the excess oil before serving, so we will place them on a paper towel to absorb any excess oil. We will serve our schnitzel with a side salad and some grilled vegetables.
