Today, we will be making a delicious nut cake that is moist, fluffy, and best of all, incredibly easy to prepare! You can even prepare it the day before and it will taste just as delicious the next day - what more could you want? So let’s get started!

To begin, we need to separate six eggs. We also need 300 grams of carrots, which we will peel and grate using a curved grater. Then, we will beat the egg whites until they are stiff - this should take about five minutes. Look at how stiff and fluffy they are!

Now, let’s take another bowl and add in the egg yolks, along with 80 grams of sugar. We need to beat this mixture until the sugar has dissolved, which should take about three minutes. Next, we can add in the hazelnuts, almonds, carrots, cornstarch, and the grated zest of a lemon. Be careful not to include the white part of the lemon as it might be bitter.

We should mix all these ingredients together using the mixer on a low setting, gradually increasing the speed until everything is well combined. Meanwhile, our oven should already be preheated to 170 degrees Celsius with both top and bottom heat settings on.

It’s now time to fold in the egg whites gently using a spoon, being careful not to overmix the batter. We’ll then pour the batter into a 26cm diameter cake pan, which has been greased with butter and lined with parchment paper.

After an hour in the preheated oven, our nut cake should be ready. Let it cool down completely outside the oven, then carefully run a knife around the edges of the cake to release it from the sides of the pan. Once it’s sitting flat on a plate, we can sprinkle it with some powdered sugar and serve.
