To make the pasta dough for the maultaschen, we need 400 grams of flour, five tablespoons of oil, half a teaspoon of salt, and 125 ml of water. But the most important step is to blanch the spinach in boiling salted water. This can all go into the water at once, and as soon as the water begins boiling, we add the spinach. We take it out as soon as it wilts, and the color and a majority of its vitamins remain intact.

Next, we focus on making the dough by placing the flour in the center, followed by the oil, salt, and a sip of water. Once the dough becomes somewhat pliable, we knead it with our fists to ensure that it is smooth and not sticky. Then, we wrap the dough in foil and let it rest in the fridge for half an hour.

Meanwhile, we make the filling for the maultaschen. We combine 400 grams of blanched and drained spinach, two eggs, 200 grams each of ground beef and pork, bread soaked in milk, half an onion, salt, pepper, parsley, and chives. After mixing everything well, we add white pepper, salt, and nutmeg for seasoning.

We then roll the dough out to about 15 by 15 centimeters and place the filling on it. We fold the dough and seal it with egg yolk before pressing it and crimping it with a fork. The maultaschen are then cooked in boiling broth for 10 minutes on low heat, followed by two additional minutes of simmering to complete the dish.
