Introduction:

Baking bread or making a cake is not only an art, but it is also a science. A slight variation in the quantity of ingredients used or the way they are mixed may affect the taste, texture and appearance of the final product. Today, we’re going to talk about baking a delicious bread known as “Stollen” which is a traditional German Christmas cake. In this article, we’ll explore the recipe and the process involved in making Stollen from scratch.

Ingredients:

To make Stollen, we need the following ingredients: - 40 ml lukewarm milk - 10g fresh yeast - 500g flour - 1/2 teaspoon salt - 2 teaspoons lemon zest - 2 teaspoons orange zest - 80g soft butter - 3 egg yolks - 70g sugar - 1 pack vanilla sugar - 260 ml lukewarm milk - 200g raisins - 50g orange peel - 50g lemon peel - 100ml orange juice (or water) - Powdered sugar for dusting

Process:

1. In a small bowl, mix 40 ml of lukewarm milk with 10g of fresh yeast. Stir well and let it sit for 5 minutes to allow the yeast to activate.

2. In a separate large mixing bowl, combine 500g of flour with 1/2 teaspoon of salt, 2 teaspoons of lemon zest and 2 teaspoons of orange zest.

3. Add 80g of soft butter, 3 egg yolks, 70g of sugar and 1 pack of vanilla sugar to the mixing bowl. Mix well.

4. Slowly pour in the 260 ml of lukewarm milk and yeast mixture to the dough while mixing. Continue to knead the dough until it becomes smooth and elastic. This will take about 5-10 minutes.

5. Next, add 200g of raisins, 50g of orange peel and 50g of lemon peel (which have been soaked in 100 ml of orange juice or water for 2 hours) to the dough. Knead the dough for another 5-10 minutes or until the ingredients are fully incorporated into the dough.

6. Cover the dough with a damp cloth and let it rest for 1 hour and 30 minutes. The dough should double in size.

7. After the resting period, knead the dough for a few more minutes.

8. Preheat your oven to 180 degrees Celsius.

9. Cut the dough in half or as per your desired size and shape, then shape them into oblong loaves.

10. Place the loaves onto a baking tray lined with parchment paper.

11. Let the loaves rest for another hour.

12. Brush the loaves with melted butter.

13. Bake the loaves in the preheated oven for approximately 50 minutes, or until golden brown.

14. Remove the Stollen from the oven and let it cool a little bit before removing it from the tray.

15. Dust the cooled Stollen with powdered sugar before serving.

Conclusion:

Stollen is a delicious German Christmas cake and is best enjoyed during the festive season with family and friends. Making Stollen from scratch takes time and effort, but it is well worth it because of the authentic taste and texture, which is unmatched by store-bought or pre-made cakes. So, why not try baking Stollen at home this Christmas and impress your loved ones with your baking skills?
