Today I am going to show you how to make your own cooking cheese and be happy while doing it. First, you need to watch the video on how to make white cheese and cheese or quark up until the point where the whey is drained. I have just drained the whey and now it’s time to start cooking.
To make the cooking cheese, you need to drain the quark again so that almost no water is left in it. I usually get around 700 to 800 grams of quark from one kilogram of milk, but for this recipe, I use only 500 grams of quark. To the quark, I add browned butter, salt, and caraway seeds.
Now, I want to leave the 500 grams of quark in the fridge overnight, and by tomorrow morning, it will have dried nicely. Then, I will show you how to make Harzer cheese or hand cheese in another online video.
When you make milk, you also have to skim off the cream. But for this recipe, we need the cream, so I will use the cream I collected for making butter. Speaking of which, I will be making butter soon, and you can watch that too in my other videos.
After leaving the quark to drain for 12 hours, it is now nice and dry. I remove the remaining liquid with a spoon, and then I heat it up slowly while stirring constantly. I use a thermometer to keep the temperature at maximum 40 degrees, so the cheese won’t clump.
Next, I add a tablespoon of acid to neutralize the cheese. Then, I add 450 grams of butter and salt, pepper, and caraway seeds to taste. After mixing all the ingredients thoroughly, I let it cool down and set in a bowl.
