Today, we will be making something that you all love and that is homemade fresh pasta. We will be making Tortelloni, which are a size bigger than Tortellini and are traditionally filled with vegetarian ingredients. Today, we will be making a beautiful ricotta filling and we will also be making the pasta dough from scratch. I will be using two types of flour for the dough: Simular, which is finely ground Italian durum wheat semolina, and pasta flour. If you cannot find these ingredients, you can use wheat flour, type 550.

To make the dough, I mix equal amounts of Simular and pasta flour (250g each) with a pinch of salt, then make a small well in the center and crack 5 eggs into it. I whisk the eggs and then slowly incorporate the flour into the eggs. I knead the dough for about 10 minutes until it is elastic and then let it rest for at least 30 minutes. If you are using Simular, you might need to add a little more water to the dough to make it more moist. Alternatively, you can add an extra egg yolk.

To make the filling, mix ricotta with fresh parsley, lemon zest, grated Parmesan cheese, nutmeg, salt, and pepper. If the mixture is too runny, add some bread crumbs to make it thicker. Chill the mixture in the refrigerator for at least half an hour before using.

To make the Tortelloni, roll out the pasta dough using a pasta machine, then cut the dough into squares. Place a small amount of filling in the center of each square, brush the edges with water, and fold the pasta square into a triangle. Press the edges together to seal them, then bring the two corners of the long side of the triangle together and press them together to form a ring-shape. The Tortelloni is now ready to cook. Bring a pot of salted water to the boil and cook the Tortelloni for 3-5 minutes until they are cooked through, then drain them.

To make the sauce, melt some butter in a pan, add grated Parmesan cheese and some pasta water, and stir until the cheese has melted.

The Tortelloni can be served with the sauce and some fresh sage leaves. This recipe makes about 40 Tortelloni.
