For Monday’s cake, I am taking 100 grams of ground almonds, 80 grams of flour, 2 teaspoons of baking powder, 150 grams of ground poppy seeds (I used blue and white ones), 120 grams of sugar, 120 milliliters of oil, 120 milliliters of water, and two pears which I recommend and cut into small pieces.

Now, quickly setting the camera aside, let’s start with the Monday’s cake. I whisk the eggs with the sugar until it becomes a thick and creamy mixture, which takes around five minutes for me. Then I add oil and water.

I mix the ground almonds first with the flour, baking powder, and poppy seeds, and then blend it thoroughly into the mixture. My baking dish has a size of around 23 x 33 cm lined with baking paper, and I put some small butter dots in between to avoid slipping.

Now, I pour the batter into the dish and spread it evenly, then add the pear cubes on top. Next, I prepare the delicious quark cream by taking 250 grams of 20-percent quark (one could use another brand as well), 50 grams of sugar, a pack of vanilla sugar, 20 grams of cornstarch, 50 grams of butter, and two separated eggs.

First, I beat the egg whites until stiff, and clean the mixing bowl and beaters thoroughly. To make the cream, I mix the quark, sugar, and vanilla sugar, then add the softened butter and cornstarch. Finally, I carefully fold in the beaten egg whites and spread the mixture onto the cake, sprinkling 50 grams of sliced almonds on top.

Now, it’s time to bake the cake at 180 degrees Celsius with the upper and lower heat for around 50 minutes in the preheated oven. While the cake is cooling, I dust it with powdered sugar and then cut a slice to show you how delicious it is.
