Hey Puhdys, today I will be making a delicious red curry with you, and if you’ve ever wondered how to achieve that authentic taste at home, then definitely stay tuned until the end. I already have all the ingredients here, and they’re actually relatively simple. Especially with the vegetables, you can be completely variable and use whatever vegetables you have lying around in the fridge. Today, I have chosen a pepper, half a broccoli, and of course onion and garlic. You can also use mushrooms, sweet potatoes, zucchini, eggplants, and just about anything else. So, just take a look in your fridge and let’s make an awesome curry.
For the vegan version, I will be using tofu, but you can just as well use chicken or shrimp. However, when using tofu, it’s important to squeeze out all the liquid and dry it before cooking it. Use paper towels and press the tofu to remove all the liquid. For the vegetables, cut the broccoli into small florets and the pepper into bite-sized pieces.
To make the tofu crispy, coat it in corn starch before frying it in coconut oil. Coconut oil is the best for this dish, but you can use any other oil as well. Fry the tofu until it’s crispy and golden brown on each side.
Next, fry the broccoli and pepper together with the curry paste for a few minutes to enhance the flavours. Be sure to read the ingredients list when selecting the curry paste. Many brands add sugars or other additives that take away from the flavour.
When ready, add the coconut milk and let it simmer over low heat for about ten minutes. While the curry simmers, cook the Basmati rice in salted water. When the curry is finished, add salt, chillies, coriander, and lime to taste.
Serve the curry with the rice and enjoy your delicious homemade curry. This dish is perfect for a cozy evening at home or for entertaining friends. The best part about this dish is that it’s so versatile, so don’t be afraid to mix things up and add new veggies or proteins.
In conclusion, making curry at home can be simple and delicious if you have the right ingredients and follow the right steps. So next time you’re feeling like having some good home-cooked comfort food, try this delicious red curry recipe. Your taste buds will thank you.
