Gaziantep Lahmacun Rezept

Peace Freunde! Welcome to another video and welcome back to our kitchen. As you can see, we are here today to cook something very special - Lahmacun and Lammers. In my opinion, Lahmacun is one of the tastiest Turkish dishes out there. I learned how to prepare it when I visited Gaziantep earlier this year. Gaziantep is a city in Turkey that is known for its exceptional cuisine. While I was there, I learned about the traditional and authentic way of making Lahmacun, and I am excited to share it with you today.

To start with, we need to make the base for our Turkish pizza - the dough. For this, we need three ingredients - flour, water, and salt. We mix them together and knead the dough to make it thin and crispy. Then we add a fresh meat and vegetable mix on top of the dough. In Gaziantep, the meat mix is typically prepared with lamb and beef, which gives it a unique flavor that you won’t find anywhere else.

We carefully select the meat and chop it into small pieces. We then mix it with green and red bell peppers, garlic, parsley, salt, black pepper, and chili. To bind all these ingredients together, we add Turkish tomato paste, which is a crucial component of the dish. Tomato paste was originally used in winter when fresh tomatoes were not available. However, nowadays, it has become a staple ingredient in preparing Lahmacun.

While the meat mix is cooking, we prepare our small dough balls. We weigh them to make sure they are all the same size and roll them out thinly. We place them on our pizza stone and bake them in a very hot oven. In just a few minutes, they become crispy and golden brown.

Once the dough is ready, we spread the meat mix over it and put it back in the oven for a few more minutes. The result is a golden-brown pizza with a crispy base and a juicy meat and vegetable mix on top - a unique and unforgettable taste experience.

Lahmacun and Lammers are not just a treat for the taste buds; they are also a symbol of Turkish culture and tradition. The dish has been a staple food in Turkey for centuries, and each region has its unique way of preparing it. In Gaziantep, for example, they add lamb to the meat mix, which gives it an exceptional flavor. These small touches are what make traditional Turkish recipes so special.

In conclusion, making Lahmacun and Lammers is not just about cooking food. It’s an art that requires passion, patience, and a love for the culinary experience. We hope you enjoyed our video and learned something new about Turkish cuisine. Until next time, Peace Freunde!
