Welcome back to the Cooks, my dear listeners! It’s noon, and today we are making Vichy Carrots. This is a super quick way to prepare carrots, and we need butter, water, carrots, salt, sugar, parsley, and onions.
First, we trim the carrots from the top and bottom. Don’t let the sound of the bell at noon irritate you. So, we start by cutting the carrots. I usually prefer using organic carrots because I think they taste better. These are not the feed carrots; they are a little bigger. We want to have half slices, which will look cooler.
These carrots are a little bit like skikarotten. Actually, I’m not quite sure, but I think it’s something to do with the water that comes from a source. It’s like carrots in mineral water or in their own juice. I will show you how to halve the carrots. We will cut them diagonally into nice slices. You can use a vegetable slicer as well, but cutting by hand can help you to learn to do it faster. The edges and corners will be used for broth.
The next step is to add both sugar and salt since this recipe is relatively sweet. Salt helps the carrots to become tender without cooking them. It is like chivijet, where salt and vinegar tenderize the fish. When they start to release water, the carrots will draw more water and give a fantastic flavor to our dish.
While we leave the carrots to soak up the sugar and salt, we will chop the onion. We will put it in small, fine pieces. We will also chop some parsley, making sure we don’t make it too fine, so the essential oils remain.
We will add a cold butter cube to the onions in the wok to sweat them. Do not let them brown. After this, we will add the carrots, which have been soaked in salt, and sugar, giving them a good mix. We will then add a small amount of mineral water, give it a quick stir and let the liquid boil until the carrots have reached a decent tenderness.
Finally, we will add another cube of cold butter; this gives the liquid some substance and glazes our carrots. Do not overcook them, or they will lose their texture.
