Hello everyone and welcome to the “Dumpling Special”! In this series of videos, I will be sharing with you my tips and techniques for making delicious dumplings. In this first video, I will show you how to make the perfect dumpling dough.

For this recipe, you will need just three simple ingredients – 420g of wheat flour, half a teaspoon of salt, and 8 ounces of boiling hot water. Begin by adding the flour and salt to a mixing bowl, and gradually adding the hot water. Stir the mixture with a wooden spoon, adding a little more water until the dough just holds together.

The key to making this dough is kneading. You need to knead the dough for at least 10 minutes, until it becomes supple and smooth. You can do this by hand, or using a food processor. Once the dough has been kneaded, shape it into a ball and let it rest under a damp cloth for 15 minutes.

After 15 minutes, knead the dough again for 5 minutes and then cover it with a damp cloth and let it rest for 1 hour.

To make the dough sheets, divide the dough ring into two half rings, being careful not to let one half dry out. Roll out one half of the ring at a time, dividing the dough into 5-6 pieces and forming each into a ball.

Flatten each ball slightly and then use a rolling pin to roll it out into a thin sheet, being careful to roll from the inside out to ensure that the edges are thinner than the center. You can also stretch the dough by pulling it gently with your hands.

Cut the sheet into a round shape using a bowl or glass as a guide, and repeat with the other balls of dough.

You can either fill and cook the dumplings immediately, or store them in an airtight container in the fridge for later use.

Using this recipe, you should be able to make around 35-40 dumpling blanks, which you can then fill with your favorite ingredients. In the next video, I will show you some of my favorite folding techniques, so stay tuned!
