Tomorrow we have a special barbecue in Münsterland, so we are preparing a delicious Greek pita and a variety of antipasti to go along with it. This will be perfect for a dinner at home, a grill party, or for when friends come over. We have a lot to do, but with the help of some Mediterranean ingredients, we can create some amazing dishes.

To start, we have prepared 300 grams of pita dough. We add 1 teaspoon of salt, 1 tablespoon of sugar and some fresh thyme to the dough for some amazing Mediterranean flavor. We also add 7 grams of dry yeast, 150 ml of milk and 70 ml of water to the dough. Then we kneed it in our dough mixer for about 15 minutes until it becomes smooth and elastic. While the dough is kneading, we start cutting our vegetables.

For the vegetables, we have aubergines, zucchini, paprika, and sweet pepper. We start by cutting the aubergines into long slices and sprinkle some salt over them to remove any bitterness. We put them in a bowl and add salt, pepper, olive oil, and fresh rosemary. We then let them marinade for about an hour.

For the zucchini, we cut them into pieces and marinate them with thyme, salt, pepper, garlic, and olive oil. We also cut the paprika into nice thin slices and marinate them in a similar way. We remove the stem of the small sweet pepper and remove the seeds and fill them with a mixture of cream cheese, fresh basil, lemon zest, garlic, salt, pepper, and olive oil. We then fry them in hot oil until they become soft.

Once we have prepared all the vegetables, we start baking the pita bread. We create small balls from the dough and roll them flat before baking them in a preheated oven for about 6-7 minutes at 220°C. Once they are ready, we let them cool down a bit before cutting them into small pieces.

Finally, we assemble everything on a big platter, arranging the vegetables and the pita bread together along with some olives, feta cheese, and hummus. The result is a colorful and delicious plate of antipasti that is perfect for any occasion. We can serve it to our family and friends at home, as a side dish for a barbecue, or even pack it for a day out.
