There’s a certain vibe in the air, a love for Christmas and the Christmas bakery. In recent years, we’ve made small Christmas stollen and even Christmas almonds, but this year, one of my favorite recipes is Thomas’s best cinnamon stars. And I’ll spoil the result a little by saying I prefer them without the powdered sugar glaze, but I thought I’d mix it up and add some marzipan instead. They’re really delicious, and if you want to know how easy they are to make and how good they taste, just stick around.

It’s not exactly related to baking, but it’s still lovely to take a walk outside, especially in a snowy forest.
When you come back home, feeling cold to the bone, it’s time to turn on the Christmas lights, make yourself a hot beverage of cocoa, tea, or coffee, and indulge in something sweet. To start with, you need ground almonds, powdered sugar, cinnamon, amaretto, egg white, and for the glaze, more powdered sugar and a bit of lemon juice. It’s very simple. Put all the ingredients in one big bowl and mix them together until you form a dough. Roll out your dough, cut it into shapes using cookie cutters, and place them on a baking sheet. You don’t need to worry about spacing them out, as they don’t expand much while baking. While they’re baking, make the glaze by mixing the egg whites with the powdered sugar and a bit of lemon juice, then brush it onto the cooled cookies. It’s as simple as that.
You can also experiment a bit by using hazelnuts instead of almonds or forgoing the glaze altogether. Cinnamon stars are typically quite soft and chewy, but if you prefer them crispier, take them out of the oven a little earlier than directed.
