Here’s what we need: - 200g flour - 100g butter, softened - 100g sugar - 2 eggs - 1 tsp baking powder - 1 tsp vanilla extract - 3-4 tbsp milk - Pinch of salt Alright, now that we have all the ingredients, it’s time to start baking! Preheat the oven to 180°C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add in the eggs, one at a time, and mix well. Then, add in the vanilla extract and give it another good mix. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk until you have a smooth and thick batter. Using a cookie scoop or spoon, drop the batter onto the parchment-lined baking sheet in round balls. Make sure to leave enough space between each cookie, as they will expand while baking. Pop them in the oven for around 12-15 minutes, or until the tops are golden brown and a toothpick inserted comes out clean. For this recipe, I like to use a simple powdered sugar and milk glaze.
